Temperature control: The temperature at the initial stage of fermentation may rapidly rise to above 70-75°C. It is normal, but it should be overturned immediately. It cannot maintain high temperatures above 75°C for a long time, otherwise it will cause large consumption of nutrients for cultivation and affect the yield. In the later period, according to the different demands of different edible mushroom varieties on temperature, measures such as withdrawing the cover, increasing the density of punching holes, replenishing water, lowering the pile height, and tipping over are adopted to control the temperature in an appropriate area.
Humidification: With the sharp increase in the temperature of the material piles and constant accumulation of heat, the moisture in the materials will be evaporated in large quantities. Therefore, at the same time when overturning, it is also necessary to replenish the water in a timely manner according to specific conditions (0.5% quicklime water is preferred). The last replenishment and turning should be completed at the same time. When sowing, the “raw water†should be avoided as much as possible so as not to cause the bacteria to “not eat†after sowing.
Complete: Pleurotus ostreatus, straw mushroom and other fungi culture materials need to ferment about 5 to 6 days; Agaricus bisporus takes about 10 to 15 days. The fermented and decomposed culture material has a moisture content of about 65%, usually brownish, and is covered with white hyphae on the outside. There is no ammonia taste, and it is not sticky and rich in elasticity. The straw straw is lightly pulled, indicating that the fermentation is completed.
